Sweet Potato and Chili Soup Recipe
A healthy a delicious Sweet Potato and Chili Soup
Sweet potatoes are charming ingredients in dishes, not only because of the flavor they give, but because they contain beta-carotene and other components vital to a healthy body. They are easy to prepare and can be eaten in an infinite number of ways. This recipe not only gives the full benefit of sweet potatoes, but adds a unique spicy dash for those who enjoy their soup with a kick.
Ingredients
(Serves 4)
Butter – 25 grams
Onion – 1, roughly chopped
Red chili – 1, finely chopped
or chili flakes – a pinch
Ground coriander – 1 teaspoon
Garlic cloves – 2, crushed
Sweet potatoes – 750 grams, peeled and cut into chunks
Vegetable stock – 500 ml
Gruyere cheese – 75 grams, grated
Paprika – a pinch
Method
Melt the butter in a large pan.
Add the onion, chili, coriander and garlic.
Cook for 8 minutes until soft.
Add the sweet potatoes and leave for a few more minutes.
Add the vegetable stock.
Bring to a boil then simmer for 10 minutes.
Mash, blend or use a liquidizer.
Season and serve with the grated cheese and paprika.
