Roasted Asparagus Soup Recipe
Roasted Asparagus soup is great for an extremely healthy weight loss meal. Weight loss aside, asparagus has numerous health benefits, including an extremely high nutrient to calorie ratio, anti-cancer compounds, selenium, zinc, calcium, copper, and manganese and folate. Eating Asparagus is like eating a multivitamin!
This Asparagus soup is extremely easy to make. Cook a large batch and store in the fridge, reheating when you need a healthy and convenient meal.
Ingredients:
12x Asparagus Stalks
1x Onion
1x Carrot
1x Red Pepper
2 Liters of Chicken Stock
Olive Oil
Salt
Pepper
Method:
Preheat oven to 200 degrees C (390 degrees F)
Drizzle olive oil on a baking tray
Chop carrots, red pepper, onion and asparagus (breaking off woody asparagus stalks)
Spread on baking tray and bake for 30 minutes
Heat stock in a pot
Add roasted vegetables to stock
Simmer for 5 minutes
Blend until smooth
Season to taste
