Here is a delicious chicken and vegetable soup recipe that is low in fat, low in sodium, low in carbs, and high in taste! It really is the ultimate soup if you’re on a strict diet. It’s very simple to make; don’t forget to leave us a comment at the bottom of the page if you try it out!

Low Fat Soup Recipe – Chicken and Vegetable Soup

Serves 4

Ingredients:

2 – Chicken Breasts
2 – Red Bell Peppers
1 – Yellow Bell Pepper
1 Tin – Sweetcorn (unsweetened if possible)
2 – Medium Leeks
1 – Large Onion
1 Clove – Garlic
2 tbsp – Flour
1.5 litre – Chicken or Vegetable Stock
1/2 cup – semi-skimmed milk (instead of cream, to keep it healthy)
Salt and Pepper

Method:

Heat olive oil in pot.
Chop up onions, garlic, peppers and leeks (cut them small or chunky as you’d like; this soup won’t be blended).
Chop the chicken in to small chunks.
Add the chicken to the hot pot, and sear the meat (fry the outside until it starts to go brown)
Add the onions, garlic, and other vegetables and fry for a further 5 minutes.
Add the chicken or vegetable stock, and simmer for 15 – 20 minutes (ensuring the chicken is cooked through).
Turn the hob to a very low heat, and stir in milk. Add any more flour if you’d like the soup a bit thicker.
Season to taste.
Serve in a bowls.
