A Delicious Wild Mushroom Soup Recipe

wild mushroom soup recipeFor centuries, mushrooms have been used as food and for medicinal purposes. They were prized as a delicacy by ancient cultures, believed to be a gift from the gods that have the power to provide strength. Nowadays, mushrooms continue to be some of the most flavorful ingredients in dishes. Mushrooms have low calorie, sodium and fat content and are great sources for potassium and antioxidants, making them a popular health food choice, especially in mouth-watering soups like the recipe given below.

Ingredients
(Serves 4)
Dried porcini (ceps) – 25 grams
Butter – 50 grams
Onion – 1, finely chopped
Garlic clove – 1, sliced
Thyme sprigs
Mixed wild mushrooms – 400 grams
Vegetable stock – 850 ml
Tum Crème Fraiche – 200 ml
White bread – 4 slices, crusts removed and cubed
Chives and truffle oil, to serve

Method
Bring water to a boil in a kettle.
Pour the boiling water over the dried porcini, enough to cover.
Heat half of the butter in a saucepan.
Place the onion, garlic and thyme in for 5 minutes, until soft.
Drain the porcini but reserve the stock.
Add the porcini to the onion, garlic and thyme.
Add the mixed wild mushrooms.
Leave to cook for 5 minutes.
Pour the stock in.
Bring to a boil then simmer for 20 minutes.
Stir in the crème fraiche then simmer for a few more minutes.
Blitz the soup using a hand blender or liquidizer.
Strain the soup with a fine sieve then set aside.
Heat the other half of the butter in a frying pan.
Fry the bread cubes until golden then drain.
Serve the soup with the croutons, chives and truffle oil.
