2 Healthy Pea Soup Recipes

These 2 vibrant green soup recipes are healthy, delicious, and extremely fresh tasting. For best results, use fresh peas, but frozen peas will also do the job fine.

Healthy Pea Soup Recipe 1

Summer Pea Soup
Serves 4

Ingredients:

2 teaspoons – Olive Oil
2 Cups – Peas (Fresh or Frozen – de-shelled)
1 – Large Onion
1 Clove – Garlic
1.5 litre – Chicken or Vegetable Stock
1/2 cup – semi-skimmed milk (instead of cream, to keep it healthy)
1 – Sprig of mint
Salt and Pepper

Method:

Heat olive oil in pot.
Chop up onions and garlic.
Fry the onions and garlic, until they are nearly cooked.
Add the stock to the pot and start to simmer.
Add the sprig of mint.
Add the peas, and simmer for 10 – 15 minutes.
Turn the heat right down, and stir in the milk.
Blend with hand blender.
Season to taste.
Serve in a bowls.

Healthy Pea Soup Recipe 2

Pea, Broccoli and Asparagus Soup
Serves 4

Ingredients:

2 teaspoons – Olive Oil
2 Cups – Peas (Fresh or Frozen – de-shelled)
6 – Large Asparagus
0.5 – Broccoli Head
1 – Large Onion
1 Clove – Garlic
1.5 litre – Chicken or Vegetable Stock
1/2 cup – semi-skimmed milk (instead of cream, to keep it healthy)
1 – Sprig of mint
Salt and Pepper

Method:

Heat olive oil in pot.
Chop up onions and garlic.
Remove woody end of asparagus, and chop in to small chunks.
Chop broccoli in to small chunks, removing tough stalk.
Fry the onions and garlic for 5 minutes.
Add the stock to the pot and start to simmer.
Add the sprig of mint.
Add all the veg, and simmer for 15 – 20 minutes, adding water if needed.
Turn the heat right down, and stir in the milk.
Blend with hand blender.
Season to taste.
Serve in a bowls.
