2 Healthy Mushroom Soup Recipes

Here are two delicious mushroom soup recipes. Nice and easy to make, as well as being high in nutritional value, and low in fat. They taste much better than the canned stuff, as well as being much more healthy!

Healthy Mushroom Soup Recipe 1

Cream of Mushroom Soup
Serves 4

Ingredients:

2 teaspoons – Olive Oil
1lb – Mushrooms
1 – Large Onion
1 Clove – Garlic
2 tbsp – Flour
1.5 litre – Chicken or Vegetable Stock
1/2 cup – semi-skimmed milk (instead of cream, to keep it healthy)
1 – Bay leaf
1 sprig – Thyme
Salt and Pepper

Method:

Heat olive oil in pot.
Chop up onions, garlic and mushrooms
Fry the onions and garlic with the thyme, until they are nearly cooked.
Add the mushrooms to the pot, and cook for 2 to 3 minutes (before the mushrooms start dropping their water).
Add flour to the pot, and coat mushrooms and onions, stirring for another minute.
Add the bay leaf to the pan, and add the chicken/vegetable stock and simmer for 10 minutes.
Remove the Bay Leaf and sprig of thyme, and blend with a hand blender.
Gently simmer, and stir in milk. Add any more flour if you’d like the soup a bit thicker.
Season to taste.
Serve in a bowls.

Healthy Mushroom Soup Recipe 2

Italian Mushroom Soup
Serves 4

Ingredients:

2 teaspoons – Olive Oil
1lb – Mushrooms
2 – Red Onions
2 tbsp – Flour
2 Cloves – Garlic
1.5 litre – Chicken or Vegetable Stock
1.5 cups – Fusilli Pasta
1 tin – Kidney Beans
1 tin – Chopped Tomatoes
Salt and Pepper

Heat olive oil in pot.
Chop up onions, garlic and mushrooms
Fry the onions and garlic until they are nearly cooked.
Add the mushrooms to the pot, and cook for 2 to 3 minutes.
Add flour to the pot, and coat mushrooms and onions.
Add the stock to the pot, and simmer for 5 minutes.
Add the chopped tomatoes, kidney beans and pasta to the pot, and simmer for a further 15 minutes.
Once all the ingredients have cooked and heated through (make sure the pasta is cooked properly), season to taste.
Serve in a bowls.
