These lentil soup recipes are extremely good for you; lentils are a great addition to your diet, and are often ignored in the western world! Try them out; they’re a great way to make hearty, thick soups without adding fat and calories. Both of these recipes are incredibly simple to make.
Healthy Lentil Soup Recipe 1
Simple Winter Lentil Soup
Serves 4
Ingredients:
500g – Lentils
1 – Large Onion
1 Clove – Garlic
4 – Large Carrots
1.5 litre – Chicken or Vegetable Stock
Salt and Pepper
Method:
Rinse lentils in cold water.
Chop carrots, onions and garlic.
All lentils and vegetables to your pot.
Add chicken/vegetable stock (or water).
Simmer for 25 – 35 minutes.
Blend with a hand blender.
Season to taste.
Serve in bowls.
Healthy Lentil Soup Recipe 2
Traditional Lentil Soup
Serves 4
Ingredients:
2 tbsp – Olive Oil
500g – Lentils
1 – Large Onions
2 tbsp – Flour
1 Clove – Garlic
1.5 litre – Chicken or Vegetable Stock
2 – Potatoes
2 tsp – Ground Cumin
Salt and Pepper
Heat olive oil in pot.
Chop Potatoes, Onions and Garlic.
Fry the lentils, potatoes, onions and garlic until they are start to cook (but don’t let them go brown).
Add cumin.
Add the stock to the pot, and simmer for about 35 minutes.
Once cooked, blend with a hand blender.
Season to taste.
Serve in a bowls.
