Healthy Chicken Chowder Recipe
This is a great tasting, healthy soup, that is both cheap, and easy to make. With our recommended ingredient quantities, it will comfortably feed 5 – 6 people. If you are cooking it for yourself, put it in the fridge when it has cooled and reheat it for subsequent meals.
This soup is an excellent winter warmer. Rich and hearty, whilst being nutritious and filling, it is excellent for the cold winter months.
Ingredients (Serves 4):
4x Skinless Chicken Breasts
4x Peeled and Chopped Potatoes
2x Chopped Onions
2x tbsp Parsley
2x tbsp Single Cream
2.5 pints of water
1x Can of sweetcorn
1x tbsp Chopped Garlic
1x tbsp Salt
Cornflour (depending on how thick you would like your soup)
Blackpepper
Step by step recipe:
First of all you will need to dice your chicken, and chop your potatoes and onions:



Once our ingredients are chopped, we need to cook them. To do we will lightly fry the chicken and onion. If you would like to make the recipe even healthier, you can boil these ingredients with the potato. In this instance, we will fry the chicken and onion together in the pot, and boil the potato in the microwave for 12 minutes.
Whilst our ingrediants are cooking, we will add the salt and garlic:

Once the chicken and onion has cooked, we add the water, the cooked potato, the can of sweetcorn, and the parsley:

Let the Chunky Chicken Chowder simmer for 30 minutes, and finally add the cream and cornflour (add as much cornflour as you like, depending on how thick you like your soup) Also add a sprinkling of blackpepper:

Finally, our healthy soup recipe is finished, and you have succesfully made Chunky Chicken Chowder. Whatever you can’t eat, put in the fridge for later!
