These great carrot soup recipes are extremely easy to make, low cost, and will definitely help you to lose weight.
Healthy Carrot Soup Recipe 1
Curried Carrot and Parsley Soup
Serves 4
Ingredients:
2 teaspoons – Olive Oil
1 tablespoon – Cumin
1/2 tablespoon – Turmeric
7 – Large Carrots
1 – Large Chicken Breast
1 – Large Onion
1 Handful – Parsley
2 Cloves – Garlic
1.5 litre – Chicken or Vegetable Stock
Salt & Pepper
Method:
Heat olive oil in pot.
Chop up onions, garlic and carrots.
Fry onions, garlic and chopped carrots.
Once the onions and garlic are cooked, add cumin and turmeric.
Add the chicken/vegetable stock and simmer for 45 mins.
Chop Parsley.
Once the carrots have cooked, add parsley.
Blend with a hand blender.
Once smooth, season to taste.
Serve in a bowls.
Healthy Carrot Soup Recipe 2
Carrot and Leek Soup
Serves 4
Ingredients:
2 teaspoons – olive oil
1 – large onion
2 – cloves garlic
2 – large leeks
5 – large carrots
1.5 litre – Chicken or Vegetable Stock
Salt and Pepper
Heat the olive oil in a pot.
Chop the carrots, onion, garlic and leek.
Add carrot, garlic leek and onion to pot, and cook until garlic and onion are cooked.
Add chicken/vegetable stock, and cook until the carrots have softened.
Blend with a hand blender.
Season to taste.
Serve in bowls.
