2 Great Carrot Soup Recipes
Carrot Soup Recipe #1
(Serves 4)
This is a great hearty carrot soup recipe for the winter. The added rice thickens the soup, making it feel heavier and more filling.
Ingredients:
1-2 – Onions
6-8 – Carrots (or olive oil as a healthier alternative)
2 tbsp – Butter
1 litre – vegetable or chicken stock
1/2 – Cup Rice
Salt and Pepper
Method:
Finely chop the onions and carrots.
Melt the butter in a pan, and add the chopped onions and carrots.
Cook for around 7 minutes, until they start to go clear.
Add chicken or veg stock (boiling water with a stock cube will do).
When simmering, add the half cup of rice.
Cook for 15 to 20 minutes.
Blend with a hand blender.
Season to taste.
Serve in bowls.
Carrot Soup Recipe #2
(Serves 4)
This carrot soup recipe is slightly lighter than the first, and has tomatos to add a depth of flavour. Perfect for the summer!
Ingredients:
6-8 – Carrots
2 tbsp – Butter (Or olive oil as a healthier alternative)
1 – Large Onion
2 tbsp – Tomato Puree
1 tbsp – Flour
Salt and Pepper
Method:
Chop the Onions and Carrots finely.
Simmer the stock, and add the carrots and onions to cook and soften.
Simmer for 15-20 minutes until the carrots are soft.
Stir the butter and flour in to the stock, to thicken.
Add the tablespoon of tomato puree (more if needed).
Blend with a hand blender.
Season to taste.
Serve in bowls.
